When I decided to do my elimination diet 8 years ago, I knew that I needed to be prepared with a lot of good recipes. I had read several articles and blogs about people not making it even 30 days because they didn’t prepare themselves and their kitchens. One of my favorite recipes I found, and a favorite of many others as well, is my banana bread. I have tweaked it over the years, and decided to share my newest and best recipe yet!
If you aren’t dairy free, you can use melted grass-fed butter instead of coconut oil. You can also add in gluten free dairy free chocolate chips. I like the Enjoy Life brand. I also like to make this as a regular loaf, mini loaves, or in my Babycakes mini muffin maker. If you try the recipe, let me know what you think!
